Continuing on my "yay for Fall!" stint, I made some vegan pumpkin bars. I found the recipe from Happy Herbivore, a site that I've been checking out lately but hadn't tried anything from until now.

The white beans I used in this recipe (yes, beans) had some seasoning out of the can (blah!), but I rinsed the heck out of them and did a few taste-tests before I deemed them okay to use.
I liked these a lot, though the first reaction I got from my "reviewers" was something like, "Oh, you made a healthy dessert." I don't like hearing that, because although I do like to make healthy desserts, I don't want it to TASTE that way necessarily. I liked these because they are bean-based (no flour) and made me feel energized rather than sickly after eating them. The pumpkin spice is definitely prevalent, though it's not too sweet or anything. I think some carob chips would have been a nice addition, though.
