Vegan No-Bake Chocolate Mousse Tart

Today's my sister's birthday, so go on over to her blog to wish her a good one!

I'm serving up some virtual dessert today... to all of you!

A while back, I finally got to go to a vegan restaurant that also serves raw food called Au Lac.  All the food was super yummy, but this dessert that we ended up getting really "took the cake."

This is called the Chocolate X-Tasy, and ecstasy it was.  It was cold, rich, chocolate-y, and had a nice minty flavor inside.  It did not feel like an "empty" dessert or waste of calories AT ALL.


After I sadly had to depart from that restaurant, I found THIS recipe and decided to give it a (literal) whirl.

Avocados + pecans = expensive recipe, but totally worth it!!

I didn't document the processing part very well, but basically, you grind up the crust ingredients (pecans, mostly), and press them into a pan.  I used a silicon one, which was helpful later.

After popping that in the freezer to firm, I then whipped up everything else into a mousse -- a pretty darn GOOD one, I must say.  I strangely like chocolate pudding, and this was a GREAT vegan sub for it.  So, so good!  I poured it on top of the chilled crust...

And may have partaken in some yummy pudding rendevouz....

Super tasty, and great as a frozen treat (it's still sitting in "The Ukrainian"'s fridge for an occasional chocolate bomb.  Did you notice there was no oven involved?  Perfect for hot-weather prep!  I guess I don't need to go back to that restaurant for some chocolate-y goodness.

(though you know I will be!).

Sharkies Prize Pack (giveaway)

It's giveaway time! On a long run recently, I took a couple packs of Sharkies Organic Sports Chews  with me to keep me going on a hot day.  I got through those 15 miles  eating these, versus normal gels.  I've been opting to eat chews over gels in my running nowadays because I just find them more palatable and easier on my stomach for some reason.  Plus, they do pack a few more calories, which is a good thing in this case. I normally associate cute little chews with candy, but these actually contain natural electrolytes.  Plus, they were light to carry and very tasty, too!  Each pack is about 140 calories.  The only downside I found to the sport chews is that they stuck to my teeth a tiny bit more than my normal choices, and the packaging gave me a fight at times.  This could easily be solved by conslidating them into a baggie pre-run, or eating them BEFORE running would be much easier than during.
