Pumpkin Bread

Are you tired of seeing pumpkin yet?  This will probably be the first and only time a pumpkin recipe appears on this blog this season.  However, THIS recipe is one of the best ones.

The key ingredient is: water.  I also halved the sugar and subbed half of the oil with unsweetened applesauce.

The loaf served as breakfast for my sister when she was a new mom.  I also brought it to a potluck recently because it whips up quickly and contains readily-available ingredients.  I'm sure it'd make a great festive snack, if you can practice portion control.  It's not too sweet and quite moist.

And yes, pie plates make perfectly good bakeware. =)

  1. I've been on a pumpkin bread kick lately. I add extra cinnamon, nutmeg and all spice to mine because I like it extra spicy. I think I like it more than pumpkin pie (which I LOVE).

  3. That loaf has a beautiful crumb and looks like it was light and delicious. Very nice, and I love the bakeware! That is great improvisation, something I could see Alton Brown doing! :)

Sharkies Prize Pack (giveaway)

It's giveaway time! On a long run recently, I took a couple packs of Sharkies Organic Sports Chews  with me to keep me going on a hot day.  I got through those 15 miles  eating these, versus normal gels.  I've been opting to eat chews over gels in my running nowadays because I just find them more palatable and easier on my stomach for some reason.  Plus, they do pack a few more calories, which is a good thing in this case. I normally associate cute little chews with candy, but these actually contain natural electrolytes.  Plus, they were light to carry and very tasty, too!  Each pack is about 140 calories.  The only downside I found to the sport chews is that they stuck to my teeth a tiny bit more than my normal choices, and the packaging gave me a fight at times.  This could easily be solved by conslidating them into a baggie pre-run, or eating them BEFORE running would be much easier than during.
